An air fryer can make very crisp fries, but only if hot air can reach them. When too many fries sit tightly together, they heat up and release moisture, then steam each other instead of browning. Before adding more minutes, find the reason the batch is staying soft.

The most common cause

An overcrowded basket is the main reason fries stay soft. A smaller portion in a loose layer is often faster and much crispier than a full basket cooked for longer.

1. The basket is too full

Fries need gaps between them. In a dense layer, moisture builds up and the lower fries stay soft. Split a large portion into batches or shake thoroughly several times. With a small air fryer, two batches are often the better choice.

2. Too much moisture remains

Fresh potatoes, wet surfaces and dense portions all add moisture to the basket. Dry fresh potatoes carefully, avoid overfilling and open the basket only briefly when shaking.

3. Time and temperature do not work together

More heat is not always the answer. If fries darken quickly but remain soft, first check the portion size and airflow. Shake them, then add time gradually if needed.

4. The fries are not moved

Shaking changes the contact surfaces and gives hot air access to new sides. A small portion may need one shake; a larger portion usually needs several. Check fries from the middle of the basket too.

5. Your appliance changes the result

A large, shallow basket behaves differently from a small, deep one. Airflow and heating also differ by appliance, so the same portion may need a different check point.

Change one thing at a time.
